I’m seeing all the news coverage about the anti‑Semitic attacks in Melbourne and Sydney, and I'm really confused. ... Australia, while having some groups of racist people, has not really had any groups of anti‑semic people, it's just not something that I've ever come across or seen before.

From a Melbourne and now Israeli Jew, Melbourne is mostly safe. Just try to avoid the protests in the city, and be careful where you wear a kippah, but other than that, you should be fine.
